Gazpacho is known as a type of culinary preparation consisting of the making of a cold soup with ingredients such as olive oil, vinegar, and raw vegetables: usually tomatoes, cucumbers, peppers, onions, and garlic. It is a very common dish in the hottest times of the year, and it is not surprising since it is a very refreshing and light recipe.

The origin of the current gazpacho is uncertain, as it was a preparation whose origin was among the disadvantaged social classes, although it has traditionally been considered a dish from inland Andalusia and from peasants, where olive oil and garden products are abundant, and summers are very dry and hot. For this reason, it is commonly known as Andalusian gazpacho. Nevertheless, the origin of gazpacho as a “”desmigado”” (crumbled) dish predates the use of vegetables in its preparation and dates back to the time of Al-Andalus (ajoblanco).
